Stone Press

Stone press method, which is used for production of olive oil, adopts old fashion production techniques and production is done through a long and hard process. Pivoting granite stones crushes the olives in the tank to form an olive paste. Then this paste is filled in 5 – 8 kg canvas bags by pestlers, smoothed by hand and arranged regularly in the press that runs with water. During this process, oil that freely leaks out, is put in special containers to rest. Then the presses are closed slowly to segregate the oil from the paste in the bags without using any additional water. The olive oil with olive juice and olive pulp is distilled by precipitation method and the olive oil produced through this method is called stone press olive oil.
